Flax Seed Blueberry Pancakes

INGREDIENTS
1 1/2 cups dry pancake mix
1/2 cup flax seed meal
1 cup skim milk
2 eggs
1 cup fresh or thawed frozen blueberries
DIRECTIONS:
Put a nonstick skillet over medium heat.
In a medium bowl, stir together the pancake mix and flax seed meal. In
a different bowl, whisk together the milk and eggs. Pour the liquid
into the dry ingredients, and stir just until moistened. Spoon ¼
cupfuls of batter onto the skillet. Then add as many blueberries as
desired and cook until bubbles appear on the surface, then flip and
cook until browned on the other side.
North
Americans are usually lacking omega 3 essential fatty acids in their
diet, and flax seed oil is an excellent supplement for this. The cells
of the body need the omega 3 fatty acids to build their cell membranes,
which protect them. The brain is largely composed of fats called
phospholipids, which are made from essential fatty acids. Thus these
oils are essential for the function and structure of the brain and
improve cognition, memory, moods and concentration.
You can add
the flax seeds to cereal, salads, protein shakes, rice, or just eat
them plain. You can add flax seed oil to other liquid drinks, or just
drink it straight. A good plan is using 1-2 TBSP of the ground flax
seed and 1/2 TBSP flax oil in the morning and before bed. Also use 1
TBSP of flax seed oil with 1 other meal during the day. You want to get
1-3 TBSP a day.
